The fungus has the remarkable ability to transform indigestible plant matter into nutritious food in just 36 hours, a process that the researchers describe as a "unique trajectory on waste, from trash to treasure."To bring this culinary revolution to life, Hill-Maini collaborated with renowned chefs, such as Rasmus Munk of the Michelin-starred Alchemist restaurant in Copenhagen and Andrew Luzmore of Blue Hill at Stone Barns in New York. Together, they have developed a range of innovative dishes that showcase the transformative power of N. intermedia.

At the Alchemist, the team used N. intermedia to create a captivating dessert. A jellied plum wine was combined with unsweetened rice custard, which was then left to ferment for 60 hours. This process, according to Munk, "altered both the aroma and taste in quite a dramatic way," resulting in unexpected flavor profiles reminiscent of banana and pickled fruit, all without the addition of any other ingredients."I found it mind-blowing to suddenly discover these flavors without adding anything besides the fungi itself," Munk exclaimed. "Of course, all of our wild shots don't work out, but when they do, they can produce quite revolutionary results."

The chefs involved in this culinary revolution hope that by showcasing the remarkable capabilities of upcycled food at the highest level of gastronomy, the concept will gain widespread commercial appeal.
